David Burke Fabrick has been my “go-to” restaurant for inventive spins on seasonal ingredients and beautifully delicious dishes since it opened. This summer, the roster of exceptional summer desserts created by Executive Pastry Chef Zac Young is no exception. The caramelized Peach Melba donuts are heavenly little donut holes filled with raspberry, and topped with a caramel peach sauce and whipped crème fraiche. If a great dessert is meant to transport you to a different time and place, then these peachy pillows make you think of farm stands overflowing with ripe peaches, and that’s enough to make me want to come back again and again. If edgy is more your speed, order the carrot cake which is definitely not for the faint of heart! It’s a delicious spin on carrot cake with cream cheese mousse and a delightful tarragon-pea tendril ice cream, which is aromatic, bold, and memorable. Do yourself a favor and try it before summer runs out.

Francois Payard Patisserie
Imagine everything you love about the light, sweet texture of macarons and combine it with delicious ice cream. Now make a plan to go to one of Francois Payard’s five New York locations for this new twist on the classic ice cream sandwich where homemade ice cream and sorbet are swirled together and sandwiched between crisp macarons shells. The sandwiches come in a variety of flavors and I opted to try the signature raspberry-pistachio and mango-coconut varieties. Both were absolutely delicious and managed to deliver big flavors without veering too sweet. And if the flavors were not enough to draw you in – the packaging might. The ice-cream sandwiches are served in adorable rectangular boxes which are equal parts whimsy and Instagram worthy.

Gelato on a stick is hardly inventive, but Pop Bar arguably does it better than most. When it’s 90 degrees outside and you need something to cool you down – Pop Bar in the West Village is just the thing. Pop Bar offers dozens of flavors, each fantastic in its own right, but they take the experience one step further by letting you customize the toppings. Hazelnut gelato dipped in dark chocolate and sprinkled with nuts? Why not! Mixed berry sorbetto half dipped in milk chocolate? Yum! Or how about a classic yogurt pop for the purists? All the pops are gluten free, and there are plenty of options for the vegans out there. Whatever you choose, one thing is guaranteed – immediate relief from the heat!

Loopy Doopy Rooftop Bar
Although not technically a dessert, who can say no to a boozy popsicle nestled inside a glass of cold bubbly? Add sweeping rooftop views of the Hudson River and Statute of Liberty, and the experience becomes the perfect ending to any sweltering summer day. The popsicles come in flavors like blueberry-mint with citadel gin, and red plum-basil with redemption rye, and while delicious on their own, they are transformed into the best adult slushy when left to melt inside the glass of prosecco (if you can stop yourself from eating them for that long!).

Spot Dessert Bar
Housed in a completely unassuming basement space with a line winding up the steep stairs, this dessert bar does things a little differently. Blame it on the Asian flare, but the desserts are well worth the wait. The most popular offering is the chocolate green tea lava cake with green tea ice cream, and yes, it’s as magnificent as it sounds. Sink your spoon into the warm, intensely chocolaty cake, and watch the dark chocolate and green ganache pouring out. When you mix them with spoonfuls of the green tea ice cream,it’s easy to forget that you’ve waited in line for 30 minutes.
